Shrimp with Strawberry, Mango and Jalapeño Salsa – Beat The Clock Thursdays

Shrimp with Strawberry, Mango and Jalapeño Salsa

Ingredients:
1 lb shrimp, peeled and deveined
1 mango, diced
6 medium strawberries, chopped
1/4 cup red onion, diced
1 jalapeño pepper, deseeded, diced
1/4 cup fresh basil, chopped
1/4 cup fresh cilantro, chopped
fresh juice from 1/2 of a lemon
House Seasoning to taste
1 1/2 tsp olive oil

Sautéed Shrimp

Warm a skillet over medium heat (I prefer cast iron). Add shrimp. Coat with 1 1/2 tsp olive oil (I prefer to use my olive oil sprayer, which measures 3/4 tsp per 10 pumps). Season to taste with House Seasoning and cook through.

Strawberry, Mango and Jalapeño Salsa

Combine mango, strawberries, red onion, jalapeño pepper, basil, cilantro and lemon juice in a large bowl, mixing thoroughly. Add a dash of house seasoning to taste.

To serve:

Divide salsa and arrange on individual plates. Top each with shrimp and serve immediately.

I served mine with some avocado slices.

When calculated in the Weight Watchers Recipe Builder, the above recipe yields 2 large servings at 11 Points Plus each, or 4 small servings at 5 Points Plus each.
