Buffalo Chicken and Cool Ranch Wraps

Ingredients Per Wrap:
1 tortilla of your choice
2 large or 3 small leftover buffalo chicken strips
1/2 cup fresh spinach
4 leaves fresh basil (optional)
red onion to taste (optional)
other fresh veggies to taste (optional)
1 tbsp ranch dressing

Notes: You really can experiment with a wide variety of veggies depending on what you like, and if they happen to be zero Points Plus veggies, even better! Just remember to plug everything into the recipe builder to get an accurate Points Plus value for your individual wrap. I prefer to use the Hidden Valley Ranch Dressing seasoning packet to make the ranch dressing at home. I just think it tastes better. I don’t use the exact Weight Watchers Buffalo Chicken Strips recipe, but my changes are noted in this post. When I plug my changes into the Recipe Builder, I get a value of 2 Points Plus per serving, which is either 2 or 3 strips depending on the size of the strips. Weigh them. Finally, as I’ve mentioned before, I really hate the special low carb or other “healthier” tortillas, so I use just a regular old tortilla like La Tortilla Factory or Ole soft taco tortillas. These are 3 Points Plus each. Feel free to use one with a lower Points Plus value if you like.


Warm the tortilla in the microwave for 10 seconds. Warm the chicken strips in the microwave (if leftovers) until heated through. Place the tortilla flat on a plate and add spinach, basil, onion and other veggies to taste.


Add chicken.


Top with dressing, fold over and serve. You may wish to secure the wrap with a toothpick.


Yield: 1 large wrap, 7 Points plus per serving as described above.
