It’s Thursday again, which means I have that crazy tight turn-around between work and Zumba during which I have to drive home, change, make dinner, eat it, and drive back in time to teach class. I need a quick, tasty dinner on the table in 15 to 20 minutes on nights like tonight. Luckily, I have just the thing.
World’s Best Chili
1 lb lean ground beef
1 packet Chili-O original seasoning mix
15 oz tomato sauce
15 oz canned light red kidney beans, drained
Brown lean ground beef over medium-high heat, about 10 minutes. Add Chili-O, tomato sauce and beans. Stir well and simmer about 5 to 10 minutes. Serve with whatever toppings you like. I like to use a spoonful of plain Chobani rather than sour cream, some cheddar cheese, and some green onions.
