Roasted Baby Yellow Potatoes with Olive Oil and Spices

Roasted potatoes have become a staple side dish at our house because they are economical, easy, quick and delicious. Altering the spices can take them from a lovely accompaniment to a special dinner to an “oven fry” that can be paired with burgers. All this goodness for only 3 Weight Watchers Points Plus per serving- and you can check off a veggie and a healthy oil on your Good Health Guidelines!

Roasted Baby Yellow Potatoes with Olive Oil and Spices

baby yellow potatoes (like these), 8 potatoes per serving
olive oil, 3/4 tsp per serving
seasoning of your choice, to taste


Preheat oven to 400 degrees. Slice the potatoes into bite-sized pieces. Place potatoes on a baking sheet, adding olive oil. I like to use my olive oil sprayer for this, but it is optional. Add desired spices. I like to use House seasoning for a basic side dish. Sometimes I add some rosemary as well. And if I’m in the mood for something a little spicy, I use Essence seasoning instead. But absolutely any spices will work, and experimentation should be encouraged!


Bake for 15 to 20 minutes or until light golden brown and fork-tender.
